Gluten Free Keto Friendly Sausage Balls

 

You no longer have to stare at these meaty little nuggets wistfully at the office potluck.

 

Ingredients:

2 16 oz packages of sausage (I recommend mild & sweet Italian, but there is a whole world of flavor out there to explore, sausage-wise.)

2 cups mild cheddar, shredded

1 1/2 cups almond flour

2 eggs

salt, pepper, and garlic to taste

Makes 32 (you could easily halve this recipe, but trust me-- these little guys will go fast)

 

1) Preheat oven to 375F.

2) Line two baking sheets with parchment paper & spray with cooking spray. You should probably do this step before the next one so you don’t get sausage meat everywhere.

3) Place all ingredients into a large bowl. Smush them all together with your hands. Revel in the squishy sensation. Be mildly disturbed by how much you are enjoying this.

4) Form the sausage mound into little sausage balls. I like them small and walnut sized and kind of squished, but again, the whole world is yours, ball-wise.

5) Bake for 15-25 minutes. 30 minutes if you’re a freak like me and like them kinda burnt. There will be a little ring of cheese around them. Do not be afraid; the cheese ring is the best part.

 

**CELIAC TIP**

MAKE SURE to check the cheese brand and sausage brand you are using for gluten. It is nefarious and loves to hide in unexpected places.
